BLOGGER'S QUICK FRESH BAKED PIZZA RECIPE...

I LOVE PIZZA, really good pizza. So, here is my "throw it together" recipe that is really good and the left over slices reheat great!
Buy frozen or refrigerated dough for pizza and a jar of pizza sauce. Keep on hand for spur of the moment pizza.
Choose your ingredients from the frig: diced onion, and bell pepper, sauteed ground beef, small slices pepperoni, sliced black olives, lightly sauteed sliced mushroom and shredded cheese (pizza variety or cheddar.) I love pickled jalapeno or hot banana pepper slices on mine whether cooked on the pizza or added to the slices before eating.

Line your pizza pan or cookie sheet with parchment paper or lightly coat with olive oil.
I prefer parchment with a few tablespoons flour on it because I use thawed frozen dough and need to spread or roll it out after rubbing a light coat of flour on it. AND, clean up is minimal!
Spread pizza sauce over the dough with the back of a spoon. I don't like soggy pizza so I go a bit on the light side adding sauce. Leftover sauce can be used in a pasta casserole, even in spaghetti sauce. *See my tip below.
Add a generous amount of shredded cheese over the sauce. Scatter your toppings of choice OVER the cheese and top the pizza with more cheese.
Bake in 425 degree oven till crust is lightly brown and cheese has melted.
Wrap leftover slices in parchment and place in a freezer bag to reheat for a quick lunch. I like to keep a slice or two in the frig for breakfast the next morning.
TIP - I make one pasta and ricotta cheese casserole with leftover sauce and add tomato sauce if needed. I freeze serving size pieces and reheat from frozen for a fast and yummy dinner. I wrap the pieces in parchment before putting into a freezer bag then reheat them in the oven WITH the parchment wrap. AGAIN, clean up is minimal! Or am I just lazy??
I guess you've figured me out by now! I use double-side coated parchment paper for everything! It's great for any temp, freezer to oven! I prefer the white paper - it's thicker than the tan and it's more appetizing to look at!
